A well balanced Japanese style chef knife designed to be used with a Japanese style pinch grip. The handle is made of Texas mesquite wood vacuum molded with resin. This knife is made of high carbon steel NOT stainless steel.
Many chefs prefer carbon steel over stainless for their daily use knives. Simply put, carbon steel is easier to sharpen and will hold an edge longer than stainless steel. However, it will patina over time so it does require a different type of care than stainless steel.
